Easy Chicken Biryani


Chicken cooked with rice, saffron, cardamom, chilli and fresh mint

Ingredients

(Serves 4)

300gms basmati rice cooked and cooled

To marinate the chicken;

600gms Boneless chicken thighs cut to bite size pieces

3 tbsp greek yoghurt

½ tsp turmeric powder

¼ tsp mild chilli powder

To cook the chicken;

3 tbsp vegetable oil or ghee

4 green cardamom pods

1 tsp cumin seeds

200gms white onion thinly sliced

160gms roughly chopped tomatoes

1 tbsp tomato puree

2 bird eye green chillies slit lengthwise

1 tbsp ginger and garlic paste (1” ginger and 6 garlic cloves)

1 tsp coriander powder

Salt to taste

To garnish;

Generous pinch of saffron soaked in warm milk

½ tsp garam masala

2 tbsp mint leaves chopped

2 tbsp coriander leaves chopped

So happy to be back on Jamie Oliver’s Food Channel this month celebrating National Curry Week! I am sharing a really simple chicken biryani that is delicious and full of flavour. This is a perfect recipe for anyone looking to attempt a biryani as an introduction. I have used readily available ingredients and minimize on cooking time. Using leftover cooked rice for this recipe is great too. Was an absolute feast when I cooked it for the team needless to say its a crowd pleaser and great for a family gathering!
