Pineapple Chicken

The Ingredients


The cook

  1. Mix all the chicken coating into a freezer bag.
  2. Take the chicken and soak it in the egg wash for a moment.
  3. Now put all the soaked chicken into the bag and mix it all up.
  4. You should end up with it coating the chicken well (and be quite tidy about it).
  5. Place it all on a baking tray and cook at 190c for 10 mins.
  6. Put the sauce ingredients into a pan and cook on a high heat for 3 mins stir all the time until its reduced.
  7. While the sauce is cooking grill the chicken to get it crispy, flipping half-way through.
  8. Put the chicken, pineapple chunks and sauce into a bowl, mix well.
  9. Then serve on vegetable egg fried rice with spring onion greens.
