Pineapple Chicken

The Ingredients
- One chicken breast diced into small chunks
- Small can of pineapple chunks
- The chicken coating:
- 1/2 cup of flour
- 1/2 teaspoon Black Pepper
- 1 teaspoon of Garlic powder
- 1 teaspoon of paprika
- 1/2 teaspoon of Ground ginger
- 1/2 teaspoon of Onion Powder
- Egg mixed up with a little water
- The sauce:
- 1/2 teaspoon coconut oil
- 3 cloves garlic mashed
- 2 teaspoons ginger mashed
- 1/4 cup soy
- 2 tablespoons of apricot preserve
- The juice from the can of pineapple chunks
- 1/4 cup brown sugar
- 1 teaspoon Srirache sauce (extra for spicy)
- 2 teaspoons cornflour
The cook
- Mix all the chicken coating into a freezer bag.
- Take the chicken and soak it in the egg wash for a moment.
- Now put all the soaked chicken into the bag and mix it all up.
- You should end up with it coating the chicken well (and be quite tidy about it).
- Place it all on a baking tray and cook at 190c for 10 mins.
- Put the sauce ingredients into a pan and cook on a high heat for 3 mins stir all the time until its reduced.
- While the sauce is cooking grill the chicken to get it crispy, flipping half-way through.
- Put the chicken, pineapple chunks and sauce into a bowl, mix well.
- Then serve on vegetable egg fried rice with spring onion greens.
