Minestrone Soup (Jamie Job)
Not for the faint-hearted … beans, beans they make you …
Ingredients
- Pack of 6 bacon
- Garlic
- 2 Carrots
- 2 Sticks of celery
- Bay leaves
- 2 small onions or 1 big one chopped roughly
- Kate
- Cabbage (Savoy)
- Veg stock cube
- 1 can tinned tomatoes
- 1 can mixed beans
- 150g small pasta
Method
- Fry stage
- Cook chopped bacon at medium/high heat with a dash of olive oil
- Throw garlic on top of bacon with some bay leaves
- Chop up carrots and mix in
- Throw in the onions
- Chop up the stalks from the kale and cabbage and thrown them in … leaves to one side
- Keep it all going … to caramelise the veg
- Throw in the veg stock cube
- Boiling stage
- Add in the chopped can tomatoes plus a can of water
- Add in can of beans
- Add in the kale chopped
- Top up with a point of boiling water
- Throw in the pasta and simmer for as long as it takes to cook the pasta (10 mins)
